Recipe: Bacon and Veggies Mini Quiches

I love quiche. It is a salty tartlet which can be filled with a lot of different things. The most common is quiche Lorraine which has bacon and leek. It is a very versatile recipe that can be used both for an elegant brunch or event, as an appetizer or for a cocktail. They look beautiful on a plate, plus they are very practical due to the individual size.

Well, today I bring you this same recipe, but my own version in which I add some more ingredients. For this recipe we will use a muffin tray or muffins molds. In this case I have used a tray, which is what I like the most.

Ingredients:

This recipe yields approximately 12 mini quiches.

  • Puff pastry (I used store-bought)
  • 1/2 chopped leek
  • 1/2 chopped red onion
  • 1/2 chopped zucchini
  • 150-200 grs bacon in small pieces
  • 100ml cooking cream (if you want to make it lighter you can use milk)
  • 1 egg
  • A handful of grated cheese

Preparation:

The first thing we will do is stretch the puff pastry. With a glass cup we cut circles and place them at the base of the molds. Read the instructions for the dough, since there are some that will need to go in the oven before filling, and others won’t need to. I like to put them in a couple of minutes so they start to cook and then fill them up. If you do put them in the oven before filling, put some raw chick peas over the dough to prevent it from growing too much.

Meanwhile we put the bacon in a pan without oil, until it begins to release a little bit of the fat. Add the zucchini and onion and sauté. Finally we add the leek so that all the ingredients finish cooking together. Set aside.

On the other hand, we beat the egg and mix it with the cream, the grated cheese and the vegetable mixture. With this mixture we fill the bases of the quiches without exceeding the edge.

We put in the oven for approximately 30 minutes at 200 ° C, or until a toothpick inserted in the center comes out clean.

You can also change the ingredients of the filling to your liking, for example a mixture of chicken and mushrooms, or prawns with green asparagus … But I assure you that this mixture that I have shared with you today is absolutely delicious. I used it for a Bridal Shower Brunch and everybody loved it. 😉
